Why Sprouted

Activation

We soak our seeds in filtered water which activates the germination process. Just the right amount water ensures optimum moisture content and the growth of a healthy sprout.

Sprouting

The activated grains or seeds continue to sprout in carefully controlled atmospheric and temperature conditions. This ensures the release of maximum nutrient content in the sprouts.

Grinding

When ready, the sprouted grains or seeds are ground and any extra non-sprouted ingredients are mixed through. The mash is then hand-moulded into a loaf and ready for cooking.

Baking

We bake the loaves at relatively low temperatures. This allows for the preservation of precious vitamins and minerals.

The Result

Dense, nutritious, hearty bread.

What Happens During Sprouting

Unsprouted grains are packed with essential vitamins and minerals. However they are also covered with anti-nutrient enzyme inhibitors that prevent premature germination and store nutrients for plant growth. Enter the power of sprouting. During activation and sprouting, these inhibitors degrade while healthy nutrients are unlocked, enhanced and made more bioavailble.

Health Benefits

Increased Nutrients
By breaking down anti-nutrients including phytates, the sprouting process increases and releases once locked up nutrients including B vitamins, vitamin C, folate, fibre and certain amino acids. The degradation of enzyme inhibitors allows our bodies to readily absorb the minerals including calcium, magnesium, iron, copper and zinc found in seeds.

Digestibility
Sprouted seeds allow for easier digestion due to their affects on enzymes that breakdown food. The process particularly converts difficult-to-digest carbohydrate starches into more easily digestible sugars. Increased fibre and the reduction of gluten further aids digestion. All of this results in breads which some of us who usually may have trouble digesting conventional breads can consume easier.

Gut Health
Good health starts in our gut. Prebiotics feed and encourage the growth of good bacteria whilst probiotics improve the number and balance of good bacteria living in our digestive systems.
